Oven Roasted Herbed Potatoes
Today’s post was actually supposed to be of the garlic aioli pictured in the image. But it did not turn out to be the way I anticipated. The problem was not the dish but my mind which was fixed on not just the raw egg yolk but also on the half cup of oil that I added into the recipe.
It has been a long time since I had mayonnaise and frankly who gives a second thought when you don’t even know the ingredients, forget the volume. I hesitated to taste the aioli knowing what I had put in it, I guess it will take some time to get used to eating raw eggs.. until then the good old ketchup is my best friend.
Nonetheless, the herbed potatoes, although simple, is the star today. It is the second time in this week I have made this.
It is a simple fries recipe with some basic seasoning including garlic, rosemary and paprika. The paprika is very mild and can be replaced with red chilli powder if you are looking for spicy fries.
Although I have used red potatoes, the russet potatoes are your best choice when making fries. It just tastes better. Take my word for it:-)
2 potatoes (preferably russet), cut into medium sized wedges or strips
2 teaspoon paprika
1 teaspoon dried rosemary
2-3 cloves of garlic, minced
1/2 teaspoon salt
1-2 tablespoon oil
- Preheat oven to 400 degrees Fahrenheit.
- Toss all the ingredients together and spread evenly in a single layer on baking sheet. Bake for 35 – 45 minutes until crispy.
