Garlic Shrimp with Orange Arugula Salad

Life is wonderful. Life has it’s own way of making you a better person. You grow up to be a little more patient, wiser and are able to deal with problems a little more better than before. Well, there is love and anger, compromises and disagreement, laughter and tears and a thousand more emotions that only women understand and is just not registered in men’s dictionary. But still.. life is beautiful!!

Ok, coming to the recipe today.. it is a simple arugula salad with some garlicky shrimp which I made for lunch this afternoon. The peppery flavor of arugula paired with orange and shrimp sauteed in a lots of garlic and olive oil make this dish a must try. It is a great salad given it takes less than 20 minutes and requires just a few basic ingredients. By the time shrimp is thawed, prep all the other ingredients for salad. Bring it all together once the shrimp is cooked which takes less than 5 minutes. A quick and easy light lunch for days when you need a little boost.

INGREDIENTS

Garlic Shrimp
olive oil, 2 tablespoon
garlic cloves, sliced, 3-4 cloves
red chilli flakes, 1/2 teaspoon
shrimp, deveined and dried on paper towel, 10-12
salt, 1/4 teaspoon

Arugula Salad
arugula roquette, washed and dried, handful or 1 cup unpacked
cucumbers, sliced thinly, 1/2 of a cucumber
tomatoes, sliced lengthwise, 1/2 of a tomato
red onion, thin slices, 3-4 slices
orange, peeled and sectioned, 5-6 slices
pepitas, 1 teaspoon
lemon juice, 1 teaspoon
salt, 1/4 teaspoon
pepper, 1/4 teaspoon
olive oil, 1/2 teaspoon

INSTRUCTIONS

  • Heat oil in a cast iron pan on a medium flame and add the garlic slices.
  • When the garlic sizzles, add shrimp and sprinkle some salt and red chilli flakes over it. Cook for a minute and flip over and sprinkle little bit of salt and red chilli flakes. Cook for another minute or two until you see light brown spots on either sides. Remove from flame.
  • Combine all the ingredients mentioned under Arugula Salad and toss well. Top it with garlic shrimp.
