Has it ever happened to you that you are not in the mood to cook, yet you have to cook coz you have a one year old who looks up to you when he is hungry. Well, this dish was an outcome of one of those days.
I often look to eggs when I need a quick and healthy dish, but when sometimes you get bored of eating omelette or scrambled eggs and you need a little more spice, then this dish is what I like to cook.
It is a simple egg curry with no tomato based gravy but still goes well with any bread or rice. For a more healthier meal, add in cooked quinoa. This also makes a perfect lunchbox.
boiled eggs, 6
onions, sliced, 1 medium
green chillies, halved/slit, 3
curry leaves, 2 sprigs
ginger and garlic, crushed or minced, 1 tbsp
cilantro, 6-7 sprigs
turmeric powder, 1/4 tsp
garam masala or chicken masala, 1/2 tbsp
salt, as per taste
oil, 2 tbsp
- Heat oil in a pan. Add sliced onions, broken green chillies, curry leaves and fry for a minute on medium flame. Then, add crushed ginger and garlic and fry until the onions have slightly turned brown.
- Add in the turmeric powder, garam masala and salt as necessary.
- Add boiled eggs and cilantro. Mix and cover for 2-3 minutes on low flame.
Serve it hot with any bread or steamed rice and enjoy a quick and easy meal.
